ABOUT THE PRODUCT
Product Description
Product Description-Natamycin CAS#7681-93-8
Pimaricin (natamycin, INN), a natural macrolide polyene antifungal from Streptomyces natalensis fermentation, treats fungal keratitis and works against fungi including Candida, Aspergillus, Fusarium and Penicillium. It is also widely used as a natural food preservative. It binds to fungal membrane ergosterol, disrupting membrane fusion to inhibit fungal growth, and blocks amino acid and glucose transport via membrane protein interference.
Product Applications-Natamycin CAS#7681-93-8
Pimaricin serves as a surface preservative coating for Italian cheeses to suppress molds and yeasts. Tasteless, odorless and colorless, it does not penetrate cheese. It strongly inhibits nearly all molds and yeasts without harming bacteria, preserving natural cheese ripening and flavor. It can be applied by dipping, spraying or mixing into cheese coatings, with typical dosages of 300–2,000 ppm.
